â˘Whole Pecans: 450 grams | 4 cups
â˘Pecan Pieces: 450 grams | 3.5 cups
â˘Brown Rice Syrup: 315 grams | 1 cup
â˘Brown Coconut Sugar: 170 grams| 0.75 cup
â˘Salt: 15 grams | 1 tsp
â˘Vanilla Bean Paste: 10 grams | 2 tsp
â˘Water: 60 grams | 0.25 cup
đŹINSTRUCTIONSđŹ
1.Turn on oven to 350F.
2.Combine pecans and pecan pieces on a baking tray. Do not put in oven until syrup starts cooking.
3.Combine brown rice syrup, coconut sugar, and sea salt in pot. Once you start cooking the syrup, put nuts in the oven. Cook syrup until 275F, turn off heat, and take nuts out of the oven. Nuts should be in oven for approximately 10 minutes. They must be warm before combining with syrup.
4. Pour nuts into cooked syrup. Mix until throughly combined.
5.Pour syrup and nuts out on greased baking sheet. Pat down into one even layer.
6.When warm to the touch, score into 1â squares.
7.When cooled, break into squares.
