I made my marshmallow chicks sitting on a peanut butter egg. When you pipe them you need to make sure you use either a lightly oiled piece of parchment, sanding sugar, powdered sugar, or chocolate under the marshmallow. If you place them on parchment without a barrier they will stick and you wonât be able to get them off.
If you want them colored, use food coloring while mixing or cover in sanding sugar immediately after shaping and before the dry.
I used a piping bag and Wilton 1A tip, but a gallon ziploc with the end snipped will work too.

Cook the sugar, corn syrup, and water to 252F. Turn off heat and transfer to heat proof bowl to cool to below 210F.
While syrup cools, hydrate the gelatin in cold water in mixing bowl.
Put gelatin bowl back on mixer stand.
Slowly pour cooled syrup mixture into gelatin with mixer on low.
Turn mixer to high speed. Mix for 8 minutes.
Turn mixer off. Fill piping bag.
Pipe marshmallow into desired shape. Sprinkle with sanding sugar and dot with eyes. Cover and let sit overnight.
Store in airtight container.
