🦃Hollow Chocolate Turkey🦃


I’m horrible at interior decorating. If I had unlimited funds I’d pay someone to decorate my whole house, for everyday looks and all the seasons. I have zero Thanksgiving themed decor, so showing off my beautiful chocolate turkey on a carefully designed tablescape was not going to happen. However... I did go to Virginia Tech and own a ridiculous amount of Hokie items. He’s the only turkey that really matters anyway 😉


Also- I had never made a hollow chocolate item before. It was really fun, and easy! The mold was $2 brand new from eBay. They have lots of cool molds you can choose from. Check it out and make a fun, new tradition.



TEMPERING DARK CHOCOLATE

Melt chocolate to 120F. I placed a heat proof bowl over top of a pot of boiling water. If you have a double boiler, use that. Do not let water or steam get into chocolate.

Remove bowl from heat. Slowly add in additional solid chocolate until chocolate temperature cools, reaches 90-92F.

You will add in 5-10% of solid chocolate to your liquid chocolate weight in order to get to this temperature. This is your “working” temperature. If you have any chocolate that is not fluid at this temperature, remove before using.


FILLING THE MOLD

Fill both halves of mold and rotate around, ensuring chocolate coverage. Place two halves together. Your mold will probably have a guide to help you make sure it’s lined up. Rotate, tap, shake lightly...get the chocolate all around!Cool in fridge until solid.Demold.
