🍫🍓Dark Chocolate Strawberry Balsamic Truffles 🍓


I don’t trust very many people with my children. I have a hard time leaving them. It makes me anxious and leaves a pit in my stomach. I’m not going to apologize for this feeling, or let anyone make me feel bad for having it. So when I bought my husband Chris Stapleton tickets back in January, I lined it up with my parents to come down and babysit. It would be our first date night out since Madeline was born. Sometimes life throws a wrench in your plans. My parents couldn’t come and we couldn’t find another babysitter we were comfortable with. We ended up selling the tickets. My sweet husband told me that if he couldn’t go with me, he’d rather use the money toward a date we could both enjoy. He knows in this season of my life I often have to choose between leaving my children and being uncomfortable or leaving an opportunity behind, so we sat this one out together.

We are a little short on date nights outs since having kids. It’s okay. For now, I’ll make us some super fancy truffles, he’ll pour a drink, and we’ll sit on the back deck listening to the white noise of the baby monitor.

🍬INGREDIENTS🍬

•Softened butter: 150 grams

•Strawberry Jam: 150 grams

•White Chocolate, melted: 350 grams

•Balsamic Vinegar: 40 grams

•Dark Chocolate for dipping: as needed

•Sea Salt for topping

🍬INSTRUCTIONS🍬

1.Mix butter and jam until smooth.

2.Slowly add in melted chocolate, stirring constantly.

3.Stir in balsamic vinegar (must be good quality!)

4.Pour in parchment lined container.

5.Cover and refrigerate overnight.

6.Cut, dip in chocolate.

7.Finish with sea salt.
