Melt in your mouth, bite sized pieces of chocolate bliss. These dark chocolate truffles are made with the good stuff and then rolled in colorful sprinkles, just for fun. Chocolate truffles defining factor are their centers- a creamy, dreamy ganache.
Once you make the ganache, how you finish the truffles is up to you! You can dust them with cocoa powder, roll them in coconut or chopped nuts, or dip them in your favorite chocolate. A truly customizable confection.
🍫INGREDIENTS🍫
•Heavy Cream: 200 grams
•Corn Syrup: 60 grams
•Dark Chocolate, finely chopped: 400 grams
•Butter, soft: 15 grams
•Rainbow sprinkles: As needed for finishing
🍫DIRECTIONS🍫
Combine the cream and corn syrup in a saucepan. Bring to a boil.Pour cream mixture over the chopped chocolate. Let it sit for 1 minute to allow chocolate to melt (don’t stir yet!)Stir the mixture until it emulsifies.Stir in the butter.Pour ganache into a pan, covering the pan in a thin layer. Cover the ganache with a piece of plastic wrap directly on top.Let the ganache cool undisturbed at room temperature. Let it sit until it is slightly firm. Do not put it in the fridge!Form the ganache into 1” balls. This can be done with a cookie scoop, a spoon, or a piping bag. Finish them off! Roll ganache truffles into sprinkles, nuts, or dip into chocolate. Be creative!
