🍫Caramel Cashew Turtles🍫


I’ve seen turtles made many different ways in the candy industry. Slabbing, small cups, depositing on warm nuts, using liquid caramel..it’s really company specific. This oven method is the best way to make turtles at home. You can make a lot or a little at once and they come out beautifully.



This week I’m going to show you one caramel recipe used three different ways. Super easy holiday gifts, you can make it once and have three yummy items.


This is a one pot caramel cooking method. Everything goes in, caramel comes out.


I used the great value @walmart oil roasted salted cashews. 30 ounces for $13! Great quality and price.


🍬CARAMELINGREDIENTS🍬

•Water: 60 grams

•Corn Syrup: 600 grams

•Sugar: 400 grams

•Heavy Cream: 155 grams

•Sweetened Condensed Milk: 265 grams

•Butter: 200 grams

•Salt: 6 grams

•Baking Soda: 2 grams

•Vanilla Bean Paste: 2 grams


🍬CARAMEL INSTRUCTIONS🍬

1.Combine all ingredients except vanilla in a large pot.

2. Stirring slowly but constantly during cooking, cook over medium heat until butter has melted and mixture starts to boil.

3. Turn heat to medium high and cook until caramel reaches 240F.

4. Turn off heat, stir in vanilla.

5.Pour on greased, flat surface that has raised edges.

6.When warm to touch, place in parchment lined storage container. Let rest 12-24 hours.


🍬TURTLE INSTRUCTIONS🍬

1.Turn oven to 350F.

2.Fill sheet pan with cashews.

3.Place pieces of caramel spaced 2 inches apart.

4.Place in oven for 2 minutes.

5.Cool completely in fridge.

6.Remove turtles from sheet pan, top with chocolate.

7.Store in airtight container.
